Not only is the nutty texture smoother than any other ball you have ever had but you will think you are eating something naughtier than smooshed fruit and nuts. Nom!

INGREDIENTS:
  • 1 cup raw almonds
  • 1 cup raw cashew nuts
  • 2 cups soft Medjool dates, pitted and roughly chopped
  • ¼ cup of water
  • 2 tablespoons coconut oil, in liquid form
  • 1 teaspoon Himalayan salt
  • 1 teaspoon vanilla paste
  • To decorate: ½ cup non sweetened shredded coconut (I pulsed mine in the blender to make a bit smaller)
INSTRUCTIONS:
  1. In a blender, process the nuts until you get a flour – you want it fine don’t process it into a butter. Leave some chunks for texture if you wish! Put in a large mixing bowl and set aside.
  2. In the same blender, put the remaining ingredients except for the coconut oil and process until you have a smooth date paste.
  3. Add the coconut oil and pulse a couple times until incorporated – don’t process too much else the mixture can split.
  4. Add the date paste to the nut flour and mix well.
  5. Shape into balls and roll in coconut to finish.
  6. Set overnight in the fridge.
